Dr. Temitope Omolayo Fasuan

Lecturer I

Dr. Temitope Omolayo Fasuan is a Lecturer in the Department of Food Science and Technology with a specialization in Food Chemistry with a bias in molecular composition and functional behaviour of foods. He obtained his B.Sc., M.Sc., and Ph.D. degrees from Obafemi Awolowo University. With over a decade of teaching, research, and administrative experience across institutions, he has contributed significantly to curriculum development, student supervision, and institutional leadership. His research focuses on characterization of food commodities, modification of starches, characterization of biocompounds in foods, compound identification and characterization, development of low-calorie foods and bread spreads, and development of functional foods. He has contributed to studies on improving the value chain for underutilized crops. He has worked on applications of food waste in the development of bioactive-rich foods and drinks. He has published extensively in reputable journals. Dr. Fasuan is a committed member of the Nigerian Institute of Food Science and Technology and actively engages in national food safety advocacy.
