Olusanya Patience Abisola (nee Ayeni)

Profile

Olusanya Patience Abisola (nee Ayeni) is an Assistant Lecturer in the Department of Food Science and Technology with a specialization in Nutrition. She holds a Bachelor of Technology (B.Tech.) and a Master of Technology (M. Tech.) in Food Science from the Department of Food Science and Engineering, Ladoke Akintola University of Technology (LAUTECH), and is currently pursuing her Ph.D. in Food Science from the Department of Food Science and Technology at Obafemi Awolowo University, Ile-Ife.

Her academic and research interests focus on Child and adult nutrition, with specific emphasis on micronutrient deficiencies, food fortification, complementary feeding and the development of nutrient-dense foods from locally available resources. She is particularly interested in addressing malnutrition among children through innovative and sustainable food-based strategies.

She is passionate about advancing research that supports food security and improves dietary quality in vulnerable populations. Her work integrates principles of food processing, chemistry and nutrition to develop practical solutions that enhance nutrient availability and accessibility.
